You can do it, right? I did mine, and it wasn't that bad...you just have to take your time, read instructions, and take notes...maybe pictures. The carb cleaner solution they have these days isn't much to crow about...it's the new "light" version. Get yourself some cans of carb cleaner and a compressor, or some compressed air cans and go for it. I got three 2bbl kits from Holley.
