Get yourself some cans of carb cleaner and a compressor, or some compressed air cans and go for it. I got three 2bbl kits from Holley.

I used to go (all prepared) to the swap meets at San Diego Jack Murphy stadium. Could then buy up blister packs of gaskets (enough for three engines) at about $1 per. Iff'n you know the part number. Ford used standard Holley gaskets, then bundled them and added their own part number. So, be doubtful you will then find theirs.
This way you come out with an excess of gaskets, but get going much faster and cheaper too. If you own a stapler, just put remainder of package onto the garage wall in some obvious place where you will forget to look next time.
