Best Core to start with?

The one on the right without the filter.

My forward drum has 5 clutchs but my direct has only 3.

should be.as long as the clutches arent burned up in it. I have a C5 that doesnt lockup and it has the C5 VB

If you have the valve body on the right it is a lockup. Cant say that Ive ever seen a non lockup C5 . Wouldnt a non lockup C5 just be called a C4? To my knowledge ALL C5's are lockup. That was the point in making the C5. I think all C5's were lockup unless the converter clutch/brake is worn out in which case it functions like a C4....more or less.
Keep the forward drum. Check the planetariy carefully. Ive seen a few recently that were shot to hell. ****can the reverse/high drum, the valve body, and the bellhousing. Keep the converter in case its any good and you can sell it to somebody who needs it.

how do you know its any good without installing it or spending a bunch of $$$$ on it just to find out the clutches are gone

Wouldnt a non lockup C5 just be called a C4?

not if it has the E2 casting

I parted out a C5 a few months ago that was a C5, lockup converter, 6 7/8" deep inch bell and all. It was an E2 casting.
Come to think of it every C-5 I have seen has had the E2 engineering number. I still think that being a C-5 means that it has a centrifugal lockup converter, 67/8" bell and that valve body he has pictured on the right. Otherwise its called a C4. C5's are lockup transmissions

What's the problem with the reverse/high drum of a C5 vs. a C4?

Wavy bottom retainer and much thicker bottom groove. Makes it difficult to put more clutches in it. You probably can fit 5 if you try but more than that your'e just about SOL.
