How do I figure out if a car is worth it?

I have 3 Thunderbirds sitting in my yard and I can't help thinking that if I pulled my head out of my ass I could make a decent car out of one of them. Since I have never done this before, how do I know which one is worth keeping and which 2 to part out? Or should I get rid of all 3 and start with something else all together?
Thanks in advance.

All 3 are 87's.
2 have 302's, one has a 6.
One used to have a 6 but my brother-n-law and I dropped a 302 in it and turned it into a roundy round car.
All 3 have more than 170K on the odometer.
One has had some body work done to it, the other 2 have many dings and dents.
All 3 are in roughly the same shape, with the roundy round car having more body damage.

I guess what I'm asking is, if I keep them or get rid of them, what parts are considered vital and what condition should they be in?

Do you WANT to build a 87 Bird, or did you just kinda wind up with them?

Like, I'm VERY into 73-79 Ford pickups, that's ALL I drive, mostly all I own, and all I really care about. It's a sickness.

I've got 2 main trucks, the 78 shortbed stepside 4x4, and the 79 Free Wheelin' shortbed stepside F100. I'd likely never get what I have invested back out of either one, but I plan to keep them until death... and maybe beyond. Well, OK, one day my kids will be driving them. I feel blessed to have 2 trucks that I've ALWAYS wanted since I was little, and they were new.

Do you feel that way about the Birds?

If you are thinking of a short track car those things fit a BBF perfect and all the conversion parts are reasonable lighten it up a bit, the T-bird I bought from Fordguy was doing 13 sec 1/4's with a little more than average 460, lots of later/better fox body parts will bolt right in as well which is another cheaper way as well, just a thought.

I like em, but I just kinda ended up with them.
I was thinking along the lines of a daily driver.
