What is the correct way to install a new carpet in a 67 mustang coupe?

Seriously, its not a bad job. you wanna make sure everything is ultra clean. If you'd like to run stereo wires to the back, now is the time to do it. Its also a good time to lay down any sound deadener if you so desire. A little dynamat here and there can really help quiet down your ride.

Unroll the carpet and lay it in the sun. This will help it relax a little, and allow for better fitment. If you need to cut any holes, start small and work your way up to perfection. You can always make a hole bigger, but no amount of cutting will make it smaller.

I honestly cant remember which piece goes down first, but if I were to guess, I'd say start in the back, then do the front.

After a long hard day." Fuzzy side up " is the best stuff I have ever heard. Thanks for the laugh.

Fuzzy side up, hmmmm....that sounds crazy enough that it just might work!!
I am sure it's not too different from when I put carpeting into my 71 Fastback, like it was said, leave it in the sun to loosen it up some, new carpet can be a real pain to install when it's stiff.
Things to consider is to make sure all seats are out (I know that one sounds obvious...but I have a friend who was determine to try and do it with out removing them), remove kick panels and door sills, and it's a great time to vacuum out the interior.
Start with the back, the front piece will lay over it when you get to it. Then just try and fit it in the best you can, most carpets have a slight contour in them that follows the floor pans, so it's not bad to do at all.
Then comes the fun! I have an automatic, so I remove the shift handle and "feel around" for the hole, then cut it out. For all the other holes I use a scratch awl, or an ice pick...poke around in the area you suspect it's in, you'll find it.
Some people I know will use a drill to go through the carpet with a bit, but that snags too many threads out of it. What I did was to get a metal tube that is sturdy and make sure it's just under the hole size, and punch through it. Worked pretty well for me!
Good luck!!

make sure you've removed the kick panels, rocker panel moldings, and rear interior quarter panel covers. Lay your sound deadener, then put the rear carpet in first. I stabbed the holes for the seats in the lower layer, then put the front piece in. I re-stabbed the holes with an awl, then with a phillips screwdriver, enlarged them enough to let the seat drop in. Easy as pie... make sure you have the carpet exactly where you want it before poking holes and dropping the seats in - the carpet stays put after that.

The most common area of mis fit that I've found is where the seat riser and the transmission tunnel come to a corner on the front... it isn't molded quite deep enough to touch completely. You don't notice it unless you step on it, but once it stretches out a bit, it won't be so noticeable.
