Which Clutch?

I purchased a Fadango Aluminum Flywheel for my 331 buildup along with a 28 oz Rattler. Now I have to take my block down to the machine shop along with my 331 Stroker Kit from Scat. What clutch/pressure plate should I install?
Is there a lightweight unit I should consider? Recommendations appreciated

Which Clutch?

It's my toy so to speak. I open track the car on occasion and even drive it to work on special occasions. I am running a stock T-5 with 3:55 gears. I have a complete Maximum Motorsports Suspension front and rear. I just pulled the air off of it and bulit and installed a rear seat delete. So I guess it is probably around 3100 to 3000 lbs. The block is in the machine shop getting bored and reciprocating assembly is ready for balancing. The machine shop did not mention they wanted the clutch pressure plate assembly for balancing.
