Get down to some serious thinking here, guys. Hook up a fuel pressure gauge, and drive the truck. Obviously monitoring the fuel pressure. 30 psi (regulated/w/vacuum/idle). Anywhere from there on UP to 40 psi, (plus/minus 2-3), unplugged, and/or under throttle.
That vehicle has 2 seperate fuel filters on it. The one large one on the frame, and possibly another inline one on the pressure line behind the intake/bellhousing area. (depending on build date).
That, or it's got the 2 on the frame. In either case, I've seen lots of people chaseing their tails for LONG time, throwing LOTS of parts when it's just been a simple fuel filter related problem.
Secondly, IF the filters are ok, it's possibly a pump (in tank), problem.
Now, if you're ruled out fuel (pressure/volume), cats won't do it. IT'd do it all the time. There would be no good times/bad times. (well, there could be this once, but I haven't seen it).
Ignition.............not likely. If you're replaced all the secondary ignition, the possibilities of a magnetized distributor, (don't ask), are fairly remote.
If nothing else, unplug the spout and drive it, see what happens.
If it jumped time, again, it'd do it all the time, besides either being gutless as hell, plus lots of other concerns.
I'll sit here and think of any other silly little things come to mind.
